Tuna Steaks with Cauliflower Rice and Sweet Potato
Ingredients:
- 2 tuna steaks
- 1 head of cauliflower, grated
- 1 cup of cooked white rice
- 2 sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Preheat the oven to 375°F.
2. Place the diced sweet potatoes on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper. Bake for 25 minutes, or until the potatoes are tender.
3. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.
4. Season the tuna steaks with salt and pepper and add them to the skillet. Cook for 3-4 minutes per side, or until the tuna is cooked through.
5. Add the grated cauliflower to the skillet and cook for 3-4 minutes, stirring occasionally.
6. Add the cooked rice to the skillet and stir to combine. Cook for an additional 2-3 minutes, or until the cauliflower is tender.
7. Serve the tuna steaks with the cauliflower rice and sweet potatoes. Enjoy!
