Turkey and Mushroom Fried Rice
Ingredients:
-1 lb ground turkey
-3 cloves garlic, minced
-1/4 cup sour cream
-1 cup mushrooms, sliced
-3 cups cooked white rice
-2 eggs, beaten
-Salt and pepper, to taste
Instructions:
1. Heat a large skillet over medium-high heat. Add the ground turkey and cook until browned, breaking it up with a wooden spoon as it cooks.
2. Add the garlic and mushrooms and cook until the mushrooms are softened, about 5 minutes.
3. Add the cooked rice and stir to combine.
4. Push the rice mixture to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
5. Stir the eggs into the rice mixture and season with salt and pepper, to taste.
6. Reduce the heat to low and stir in the sour cream.
7. Serve the fried rice warm. Enjoy!
