Turkey and Mushroom Soup
Ingredients:
• 2 tablespoons olive oil
• 1 pound ground turkey
• 1 onion, chopped
• 2 cloves garlic, minced
• 8 ounces mushrooms, sliced
• 2 carrots, chopped
• 4 cups vegetable broth
• 2 tablespoons fresh parsley, chopped
• Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium-high heat.
2. Add the ground turkey and cook until browned, about 5 minutes.
3. Add the onion, garlic, mushrooms, and carrots and cook for another 5 minutes.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce the heat to low and simmer for 15 minutes.
6. Stir in the parsley and season with salt and pepper to taste.
7. Serve hot. Enjoy!
