Turkey and Sweet Potato Bowl
Ingredients:
- 2 turkey thighs
- 2 sweet potatoes
- 1 avocado
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place turkey thighs on a baking sheet and season with garlic powder, onion powder, salt, and pepper.
3. Bake for 25 minutes or until cooked through.
4. While the turkey is baking, peel and cube the sweet potatoes.
5. Heat the olive oil in a large skillet over medium heat.
6. Add the sweet potatoes and season with salt and pepper.
7. Cook for 15 minutes, stirring occasionally, until the sweet potatoes are tender.
8. Slice the avocado and set aside.
9. When the turkey is finished baking, assemble the bowls.
10. Divide the sweet potatoes between two bowls and top with the turkey and avocado slices.
