Turkey and Sweet Potato Chili

Ingredients:

-1 lb ground turkey
-1 can (10 oz) Rotel mild tomatoes with green chilies
-1 large sweet potato, mashed
-1 large vidalia onion, diced
-1 green pepper, diced
-1 teaspoon cumin
-1 teaspoon Ancho chile powder
-1 can (15 oz) kidney beans, drained and rinsed
-1 teaspoon coriander
-1 teaspoon Mexican oregano
-2 tablespoons tomato paste
-1 teaspoon smoked paprika
-1/4 cup fresh cilantro, chopped
-1 avocado, diced
-1/2 cup shredded Monterey Jack cheese
-1 cup water
-1 teaspoon chicken bouillon

Instructions:

1. In a large pot over medium-high heat, cook the ground turkey until it is no longer pink.

2. Add the Rotel tomatoes, mashed sweet potato, diced onion, and diced green pepper. Cook for 5 minutes, stirring occasionally.

3. Add the cumin, Ancho chile powder, kidney beans, coriander, Mexican oregano, tomato paste, smoked paprika, and fresh cilantro. Stir to combine.

4. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.

5. Add the diced avocado, shredded Monterey Jack cheese, water, and chicken bouillon. Stir to combine.

6. Simmer for an additional 10 minutes, stirring occasionally.

7. Serve the chili with your favorite toppings and enjoy!
