Turkey Sausage and Meatball Frittata
Ingredients:
- 6 turkey sausages, cooked and cut into small pieces
- 12 cooked meatballs, cut into small pieces
- 4 eggs
- 2 tablespoons of goat cheese
- 1/2 cup of diced celery
- 1/2 cup of diced carrots
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat olive oil in a large oven-safe skillet over medium-high heat.
3. Add the turkey sausage and meatballs to the skillet and cook until lightly browned, about 5 minutes.
4. Add the celery and carrots to the skillet and cook for an additional 2 minutes.
5. In a medium bowl, whisk together the eggs, goat cheese, salt, and pepper.
6. Pour the egg mixture into the skillet and stir to combine.
7. Place the skillet in the preheated oven and bake for 15 minutes, or until the eggs are set.
8. Serve warm. Enjoy!
