Make Turkish Stuffed Vegetables (Dolma)
Recipe Name: Turkish Stuffed Vegetables (Dolma)
Ingredients:
- 6 medium-sized carrots
- 1 cup rice
- 2 eggplants
- 1/2 lb ground beef or lamb
- 4 tomatoes
- 1 onion
- 2 bell peppers
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions:
1. Wash the rice and soak it in water for 30 minutes.
2. Cut the tops off the eggplants and hollow them out, leaving about a 1/4 inch shell. Chop the eggplant flesh and set aside.
3. Peel the carrots and cut them into small pieces.
4. Dice the onion, tomatoes, and bell peppers.
5. In a pan, heat some olive oil and sauté the onions until translucent.
6. Add the ground beef or lamb and cook until browned.
7. Add the chopped eggplant, carrots, and bell peppers to the pan. Cook for a few minutes.
8. Drain the rice and add it to the pan. Season with salt and pepper.
9. Fill the hollowed-out eggplants with the rice and meat mixture.
10. Place the stuffed eggplants in a deep pot. Add the diced tomatoes around the eggplants.
11. Pour water over the stuffed vegetables until they are halfway submerged.
12. Cover the pot and cook on low heat for about 45 minutes or until the vegetables are tender.
13. Garnish with fresh parsley before serving.
