Make Turkish Stuffed Vegetables (Dolma)

Recipe Name: Turkish Stuffed Vegetables (Dolma)

Ingredients:
- 6 medium tomatoes
- 1 cup rice
- 3 medium cucumbers
- 4 medium potatoes
- Salt to taste
- Pepper to taste
- Olive oil
- 1 lemon

Instructions:
1. Wash the tomatoes, cucumbers, and potatoes. Cut the tops off the tomatoes and cucumbers, and scoop out the insides, setting aside the pulp.
2. Rinse the rice under cold water until the water runs clear. Drain well.
3. In a bowl, mix the rice with the reserved tomato and cucumber pulp. Season with salt, pepper, and a drizzle of olive oil.
4. Stuff each tomato and cucumber with the rice mixture, filling them almost to the top.
5. Peel the potatoes and cut them into thick slices.
6. Place the stuffed tomatoes and cucumbers in a deep pot, arranging the potato slices in between them.
7. Squeeze the lemon over the vegetables and drizzle with a bit more olive oil.
8. Add enough water to the pot to cover the vegetables halfway.
9. Cover the pot with a lid and cook over low heat for about 45 minutes, or until the vegetables are tender and the rice is cooked.
10. Serve the Turkish Stuffed Vegetables hot, garnished with fresh herbs if desired.
