Tuscan Kale and Heirloom Tomato Salad
Ingredients:
- 2 bunches of Tuscan kale, washed and chopped
- 2 heirloom tomatoes, diced
- 1/4 cup of black olives, sliced
- 1/4 cup of feta cheese, crumbled
- 2 tablespoons of olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the Tuscan kale, heirloom tomatoes, olives, and feta cheese.
2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately. Enjoy!
