Make Ugali

Recipe Name: Ugali

Ingredients:
- 2 cups of maize flour
- 4 cups of water

Step-by-Step Guide:

1. In a large saucepan, bring the water to a boil over medium heat.

2. Slowly add the maize flour to the boiling water, stirring continuously with a wooden spoon or whisk to prevent lumps from forming.

3. Reduce the heat to low and continue stirring the mixture for about 5 minutes. The mixture will start to thicken and resemble a thick porridge.

4. Once the mixture has thickened, cover the saucepan with a lid and let it simmer for about 10 minutes. This will allow the maize flour to cook thoroughly.

5. After 10 minutes, remove the lid and give the ugali a good stir. At this point, the mixture should have a smooth consistency.

6. Continue cooking the ugali for another 5-10 minutes, stirring occasionally to prevent it from sticking to the bottom of the saucepan. The ugali should become firm and hold its shape.

7. Once the ugali is cooked, remove it from the heat and let it rest for a few minutes.

8. Wet your hands with water to prevent the ugali from sticking, then shape the mixture into small balls or serve it as a mound on a plate.

9. Ugali is traditionally served as a side dish with various stews, curries, or vegetables. Enjoy!

Note: Ugali is best enjoyed when served hot. Leftover ugali can be stored in an airtight container in the refrigerator and reheated before serving.
