Recipe Name: Ultimate Mixed Bean and Veggie Pasta Salad

Ingredients:
- 1 cup pasta
- 1/2 cup couscous
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1/2 cup lentils, cooked
- 1/2 cup pinto beans, drained and rinsed
- 1/4 cup almonds, chopped
- 2 cloves garlic, minced
- 1/4 cup pickle, chopped
- 1/4 cup Parmesan cheese, grated
- 1/4 cup havarti cheese, diced
- 2 eggs, boiled and chopped
- 1/2 cup salsa
- Mixed greens
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 cup cabbage, shredded
- 1 cucumber, diced
- 1 cup broccoli, chopped
- 2 carrots, grated
- 1 avocado, diced
- 1/4 cup cranberry sauce
- 1/2 cup corn
- 2 green onions, chopped

Instructions:
1. Cook pasta and couscous according to package instructions. Drain and set aside to cool.
2. In a large mixing bowl, combine the chickpeas, diced tomatoes, black beans, lentils, pinto beans, almonds, garlic, pickle, Parmesan cheese, and havarti cheese.
3. Add the boiled eggs, salsa, and mixed greens to the bowl and gently toss to combine.
4. In a separate small bowl, mix together the sour cream and mayonnaise. Pour over the bean and veggie mixture and stir until well coated.
5. Add the cabbage, cucumber, broccoli, carrots, avocado, cranberry sauce, corn, and green onions to the bowl and mix everything together.
6. Serve the mixed bean and veggie pasta salad chilled or at room temperature. Enjoy!
