Vanilla Cupcakes


-1/2 cup (1 stick) butter, softened
-1 cup sugar
-2 eggs
-1 teaspoon vanilla extract
-1 1/2 cups all-purpose flour
-1 1/2 teaspoons baking powder
-1/4 teaspoon salt
-1/2 cup milk


1. Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.

2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.

3. In a separate bowl, whisk together the flour, baking powder, and salt.

4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Beat until just combined.

5. Divide the batter evenly among the prepared muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

6. Allow cupcakes to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. Enjoy!
