Veal Sausage and Rice Skillet

Ingredients:

- 2 tablespoons olive oil
- 2 veal sausages, cut into 1/2 inch slices
- 1/2 cup diced chicken
- 1/2 cup diced potatoes
- 1/2 cup uncooked white rice
- 2 cups chicken broth
- 1/2 teaspoon dried parsley
- 2 eggs, lightly beaten

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the veal sausage slices and cook until lightly browned, about 5 minutes.

3. Add the chicken, potatoes, and rice and cook for an additional 5 minutes.

4. Pour in the chicken broth and bring to a boil.

5. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked through.

6. Stir in the dried parsley and season with salt and pepper to taste.

7. Push the ingredients to the sides of the skillet to create a well in the center.

8. Pour the beaten eggs into the well and cook, stirring occasionally, until the eggs are cooked through.

9. Serve the veal sausage and rice skillet warm. Enjoy!
