Vegan Bolognese
Ingredients:
-1 tablespoon olive oil
-1 onion, diced
-3 cloves garlic, minced
-1 celery stalk, diced
-1 large carrot, diced
-1/2 teaspoon dried oregano
-1/2 teaspoon dried basil
-1/4 teaspoon red pepper flakes
-1/4 teaspoon black pepper
-1/4 teaspoon sea salt
-1/4 cup red wine
-1 (14.5 ounce) can diced tomatoes
-1 (15 ounce) can tomato sauce
-1 (15 ounce) can lentils, drained and rinsed
-1/4 cup nutritional yeast
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, garlic, celery, and carrot. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
3. Add the oregano, basil, red pepper flakes, black pepper, and sea salt. Stir to combine.
4. Pour in the red wine and cook for 1 minute.
5. Add the diced tomatoes, tomato sauce, and lentils. Stir to combine.
6. Reduce the heat to low and simmer for 15 minutes.
7. Stir in the nutritional yeast and season with additional salt and pepper, if desired.
8. Serve over your favorite pasta or with a side of crusty bread. Enjoy!
