Vegan Broccoli and Quinoa Casserole
Ingredients:
- 2 cups cooked quinoa
- 2 cups steamed broccoli
- 1/2 cup vegan cheese
- 1/4 cup vegetable broth
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine cooked quinoa, steamed broccoli, vegan cheese, vegetable broth, garlic powder, onion powder, paprika, salt, and pepper.
3. Mix until all ingredients are combined.
4. Transfer mixture to a greased 9x13 inch baking dish.
5. Bake for 25 minutes or until cheese is melted and bubbly.
6. Serve and enjoy!
