Make Vegan Cashew Lo Mein
Vegan Cashew Lo Mein
Ingredients:
- 1 cup cashews
- 2 tablespoons lemon juice
- 2 tablespoons nutritional yeast
- 2 cups spinach, chopped
- 1 teaspoon onion powder
- 1 cup TVP (textured vegetable protein)
- 1 cup peas
- 1 cup leeks, chopped
- 2 tablespoons cornflour
Instructions:
1. In a large bowl, combine the cashews, lemon juice, nutritional yeast, onion powder, and cornflour. Mix until a paste forms.
2. In a large skillet or wok, heat some oil over medium-high heat. Add the TVP and cook for 5 minutes, stirring occasionally.
3. Add the peas, leeks, and spinach to the skillet and cook for 3 minutes, stirring occasionally.
4. Add the cashew paste to the skillet and cook for an additional 2 minutes, stirring occasionally.
5. Serve the vegan cashew lo mein hot. Enjoy!
