Make Vegan Chickpea Curry
Vegan Chickpea Curry
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon cayenne pepper
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 cup vegetable broth
- 1/2 cup coconut milk
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions:
1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the curry powder, cumin, coriander, turmeric, cinnamon, cardamom, and cayenne pepper. Cook for 1 minute, stirring constantly.
3. Add the diced tomatoes, chickpeas, vegetable broth, and coconut milk. Bring to a simmer and cook for 10 minutes.
4. Stir in the cilantro and season with salt and pepper to taste. Serve over cooked rice or quinoa. Enjoy!
