Vegan Chocolate Cupcakes

Ingredients:

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup sparkling water
- 1/2 cup oat milk
- 1/2 cup vegan butter, melted
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

Instructions:

1. Preheat oven to 350°F. Line a cupcake pan with paper liners.

2. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.

3. In a separate bowl, whisk together the sparkling water, oat milk, melted vegan butter, and cocoa powder.

4. Pour the wet ingredients into the dry ingredients and mix until just combined.

5. Divide the batter evenly among the cupcake liners.

6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

7. Allow cupcakes to cool completely before frosting.

Vegan Chocolate Frosting

Ingredients:

- 1/2 cup vegan butter, softened
- 2 cups icing sugar
- 2 tablespoons cocoa powder
- 2 tablespoons oat milk

Instructions:

1. In a medium bowl, cream together the vegan butter and icing sugar until light and fluffy.

2. Add the cocoa powder and oat milk and mix until combined.

3. Spread the frosting onto the cooled cupcakes.
