Vegan Fish Stick Cornetti
Ingredients:
- 2 cups of fresh spinach
- 2 packages of cornetti
- 1 cup of frozen corn
- 1/2 cup of vegan cream
- 8 vegan fish sticks
Instructions:
1. Preheat oven to 375 degrees F.
2. Place the cornetti on a baking sheet and bake for 8-10 minutes, until golden brown.
3. Meanwhile, heat a large skillet over medium-high heat. Add the frozen corn and cook for 3-4 minutes, stirring occasionally.
4. Add the vegan cream and stir until combined.
5. Add the spinach and cook for 2-3 minutes, until wilted.
6. Add the vegan fish sticks and cook for an additional 3-4 minutes, until heated through.
7. Remove the cornetti from the oven and top with the vegan fish stick mixture.
8. Serve warm and enjoy!
