Vegan Italian Pasta
Ingredients:
- 8 ounces of pasta
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1 large tomato, chopped
- 1 carrot, grated
- 1/2 cup of vegan cheese, grated
- 1/2 cup of soya mince
- 1 teaspoon of Italian herbs
- 1 cup of vegetable stock
Instructions:
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.
2. Meanwhile, heat a large skillet over medium heat. Add the garlic and sauté for 1 minute.
3. Add the salt, tomato, carrot, cheese, soya mince, Italian herbs, and vegetable stock. Simmer for 5 minutes.
4. Drain the cooked pasta and add it to the skillet. Stir to combine.
5. Serve the vegan Italian pasta warm. Enjoy!
