Make Vegan Lasagna

Vegan Lasagna

Ingredients:

-1 package of vegan lasagna noodles
-1 jar of vegan marinara sauce
-1 package of vegan mozzarella cheese
-1 package of vegan ricotta cheese
-1/2 cup of vegan Parmesan cheese
-1/2 cup of vegan Italian sausage
-1/2 cup of chopped mushrooms
-1/2 cup of chopped onions
-1/2 cup of chopped bell peppers
-1/4 cup of chopped fresh basil
-1/4 cup of olive oil
-Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. Heat olive oil in a large skillet over medium heat. Add the vegan Italian sausage, mushrooms, onions, and bell peppers. Cook until vegetables are softened, about 5 minutes.

3. In a large bowl, mix together the vegan ricotta cheese, vegan mozzarella cheese, vegan Parmesan cheese, and chopped basil.

4. Spread a thin layer of the vegan marinara sauce in the bottom of a 9x13 inch baking dish.

5. Place a layer of lasagna noodles over the sauce.

6. Spread half of the sausage and vegetable mixture over the noodles.

7. Top with half of the cheese mixture.

8. Repeat layers, ending with a layer of noodles.

9. Top with remaining sauce and cheese.

10. Cover with aluminum foil and bake for 30 minutes.

11. Remove foil and bake for an additional 15 minutes, or until cheese is melted and bubbly.

12. Let cool for 10 minutes before serving. Enjoy!
