Make Vegan Macaroni and Cheese
Vegan Macaroni and Cheese
Ingredients:
- 2 tablespoons vegan butter
- 2 tablespoons all purpose flour
- 2 teaspoons creole seasoning
- 1 can coconut milk
- 1 cup vegetable stock
- 1 tablespoon dijon mustard
- 2 tablespoons nutritional yeast flakes
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 cups jumbo elbow macaroni
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large pot over medium heat, melt the vegan butter.
3. Add the flour and creole seasoning and whisk until combined and the mixture is bubbling.
4. Slowly add the coconut milk and vegetable stock, whisking constantly.
5. Add the dijon mustard, nutritional yeast flakes, onion powder, garlic powder, and smoked paprika. Whisk until combined and the mixture is thick and creamy.
6. Add the macaroni and stir until combined.
7. Bring the mixture to a boil, then reduce heat to low and simmer for 10 minutes, stirring occasionally.
8. Season with salt and pepper to taste.
9. Transfer the macaroni and cheese to a greased baking dish.
10. Bake for 20 minutes, or until the top is golden brown.
11. Serve warm and enjoy!
