Vegan Mediterranean Tofu Pizza
Ingredients:
-1 block of extra firm tofu
1 cup of chikpea flour
1/2 cup of warm water
1/4 cup of olive oil
1/2 teaspoon of salt
1/2 teaspoon of garlic powder
1/2 teaspoon of oregano
1/2 teaspoon of basil
1/4 teaspoon of black pepper
1/4 teaspoon of red pepper flakes
1/4 cup of tomato sauce
1/2 cup of chopped tomatoes
1/4 cup of sliced olives
1/2 cup of vegan cheese
1/2 cup of arugula
Instructions:
1. Preheat oven to 375 degrees F.
2. In a medium bowl, mix together the chikpea flour, warm water, olive oil, salt, garlic powder, oregano, basil, black pepper, and red pepper flakes until a dough forms.
3. On a lightly floured surface, roll out the dough into a thin circle.
4. Place the dough on a greased baking sheet and spread the tomato sauce over the top.
5. Top the pizza with the chopped tomatoes, olives, vegan cheese, and arugula.
6. Bake for 20-25 minutes, or until the crust is golden brown and the cheese is melted.
7. Slice and serve. Enjoy!
