Vegan Mushroom and Tofu Hash

Ingredients:

- 2 tablespoons olive oil

- 1 onion, diced

- 2 cloves garlic, minced

- 1 red capsicum, diced

- 2 cups mushrooms, sliced

- 2 potatoes, diced

- 1 block firm tofu, crumbled

- 1/2 cup vegan cheese, shredded

- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the capsicum, mushrooms, potatoes, and tofu and cook for another 5 minutes.

4. Add the vegan cheese and stir until melted.

5. Season with salt and pepper to taste.

6. Serve hot. Enjoy!
