Vegan Pesto Burger Bowl

Ingredients:

-1 vegan burger patty
-1/2 cup diced potatoes
-1/2 cup sliced mushrooms
-1/4 cup diced onion
-1/4 cup cherry tomatoes, halved
-2 tablespoons pesto
-1 tablespoon tomato paste

Instructions:

1. Preheat oven to 375°F.

2. Place vegan burger patty on a baking sheet lined with parchment paper. Bake for 15 minutes, flipping halfway through.

3. Meanwhile, heat a large skillet over medium heat. Add potatoes, mushrooms, onion, and cherry tomatoes. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender.

4. Add pesto and tomato paste to the skillet and stir to combine. Cook for an additional minute.

5. To assemble the bowl, divide the cooked vegetables between two bowls. Top each bowl with a vegan burger patty.

6. Serve and enjoy!
