Vegan Potato Pancakes

Ingredients:

- 2 large potatoes, peeled and grated
- 2 tablespoons cornflour
- 2 tablespoons soya flour
- 2 tablespoons white vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil

Instructions:

1. In a large bowl, combine the grated potatoes, cornflour, soya flour, vinegar, salt, and pepper. Mix until everything is well combined.

2. Heat the olive oil in a large skillet over medium heat.

3. Scoop out 2 tablespoons of the potato mixture and form it into a pancake shape. Place the pancake in the skillet and cook for 3 minutes on each side, or until golden brown.

4. Repeat with the remaining potato mixture.

5. Serve the pancakes warm with your favorite toppings. Enjoy!
