Vegan Slow-Cooked Avocado and Potato Pasta
Ingredients:
- 2 cups vegan slow-cook
- 2 cups uncooked pasta
- 1 avocado, diced
- 2 potatoes, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. In a slow cooker, combine the vegan slow-cook, pasta, avocado, and potatoes.
2. Drizzle the olive oil over the top and season with salt and pepper.
3. Cover and cook on low for 4-6 hours, stirring occasionally.
4. Serve hot and enjoy!
