Make Vegan Spinach and Corn Spring Rolls

Ingredients:
- 1 cup spinach, chopped
- 1 cup corn kernels
- 1 cup savoy cabbage, thinly sliced
- 8-10 rice paper wrappers
- Soy sauce, for dipping
Instructions:
1. In a large mixing bowl, combine the chopped spinach, corn kernels, and thinly sliced savoy cabbage. Mix well to combine all the ingredients.
2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens.
3. Place the softened rice paper wrapper on a clean surface. Add a spoonful of the vegetable mixture onto the bottom third of the wrapper.
4. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll it up tightly to form a spring roll.
5. Repeat the process with the remaining rice paper wrappers and vegetable mixture.
6. Serve the vegan spinach and corn spring rolls with soy sauce for dipping.
