Vegan Tofu and Potato Bake
Ingredients:
- 2 cups of diced potatoes
- 1 cup of diced mushrooms
- 1 cup of diced capsicum
- 1/2 cup of vegan cheese
- 1 block of firm tofu, diced
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine potatoes, mushrooms, capsicum, vegan cheese, and tofu.
3. Drizzle olive oil over the mixture and season with garlic powder, onion powder, oregano, salt, and pepper.
4. Mix everything together until all ingredients are evenly coated.
5. Transfer the mixture to a 9x13 inch baking dish and spread out evenly.
6. Bake for 25-30 minutes, or until potatoes are tender.
7. Serve hot and enjoy!
