Vegetable and Banana Frittata
Ingredients:
- 2 sweet potatoes, peeled and diced
- 1 banana, peeled and diced
- 1 carrot, peeled and diced
- 4 mushrooms, diced
- 2 eggs
- 2 tablespoons of yoghurt
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F (175°C).
2. Heat the olive oil in a large oven-safe skillet over medium heat.
3. Add the sweet potatoes, carrot, and mushrooms and cook for 5 minutes, stirring occasionally.
4. Add the banana and cook for an additional 3 minutes.
5. In a medium bowl, whisk together the eggs and yoghurt.
6. Pour the egg mixture into the skillet and stir to combine.
7. Season with salt and pepper to taste.
8. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the eggs are set.
9. Serve warm. Enjoy!
