Vegetable and Lentil Stew

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 2 carrots, diced
- 2 potatoes, diced
- 1 fennel bulb, diced
- 2 turnips, diced
- 1 leek, diced
- 1 squash, diced
- 2 stalks celery, diced
- 1 cup lentils
- 2 cups macaroni
- 2 cups cooked rice
- 2 cups chicken broth
- 2 teaspoons black pepper
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1 pound chicken, cut into pieces
- 1 pound minced meat

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the bell peppers, carrots, potatoes, fennel, turnips, leek, squash, and celery and cook for another 5 minutes.

4. Add the lentils, macaroni, cooked rice, chicken broth, black pepper, cumin, and cinnamon and bring to a boil.

5. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.

6. Add the chicken, minced meat, and any additional seasonings, if desired.

7. Simmer for an additional 20 minutes, or until the vegetables are tender and the lentils are cooked through.

8. Serve hot. Enjoy!
