Vegetable Bake

Ingredients:

1kg Potatoes, peeled and diced
1kg Sweet Potatoes, peeled and diced
1kg Carrots, peeled and diced
½ kg Truss Tomatoes, diced
½ kg Onions, diced
½ kg Zucchini, diced
½ kg Eggplant, diced
250g Green Beans, trimmed and halved
150g Baby Spinach
Bunch Baby Broccoli, trimmed and halved
2pc Corn, kernels removed
Cont. Cucumber, diced
Cos Lettuce, shredded
½ Celery, diced
Bunch Spring Onions, chopped
Bunch Parsley, chopped

Instructions:

1. Preheat oven to 180°C.

2. Place potatoes, sweet potatoes, carrots, tomatoes, onions, zucchini, eggplant, green beans, baby spinach, baby broccoli, corn, cucumber, cos lettuce, celery, spring onions and parsley in a large baking dish.

3. Drizzle with olive oil and season with salt and pepper.

4. Toss to combine.

5. Bake for 45 minutes, stirring occasionally, until vegetables are tender and golden.

6. Serve warm. Enjoy!
