Vegetable Cashewnut Stir Fry
Ingredients:
- 2 tablespoons vegetable oil
- 1 cup carrots, diced
- 1 cup spinach, chopped
- 1 cup corn kernels
- 1 cup peas
- 1/2 cup cashew nuts
- Salt and pepper to taste
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the carrots and stir-fry for 2 minutes.
3. Add the spinach, corn, and peas and stir-fry for an additional 2 minutes.
4. Add the cashew nuts and stir-fry for 1 minute.
5. Season with salt and pepper to taste.
6. Serve hot.
