Vegetable Curry

Ingredients:

- 2 tablespoons of oil
- 1 onion, diced
- 1 potato, diced
- 1 carrot, diced
- 1 capsicum, diced
- 1 cup of cauliflower florets
- 1 cup of green beans, chopped
- 1 cup of peas
- 2 tablespoons of curry powder
- 1 teaspoon of turmeric
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 teaspoon of garam masala
- 1 teaspoon of salt
- 1 cup of water

Instructions:

1. Heat the oil in a large pot over medium heat.

2. Add the onion and cook until softened, about 5 minutes.

3. Add the potato, carrot, capsicum, cauliflower, green beans, and peas. Cook for 5 minutes, stirring occasionally.

4. Add the curry powder, turmeric, cumin, coriander, garam masala, and salt. Stir to combine.

5. Add the water and bring to a boil. Reduce the heat to low and simmer for 15 minutes, or until the vegetables are tender.

6. Serve over rice or with naan bread. Enjoy!
