Vegetable Curry
Ingredients:
- 2 tablespoons of oil
- 2 potatoes, peeled and diced
- 1 onion, diced
- 1 cup of peas
- 1 carrot, peeled and diced
- 1 teaspoon of salt
- 1 teaspoon of turmeric
Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the potatoes, onion, peas, and carrot. Cook for 5 minutes, stirring occasionally.
3. Add the salt and turmeric and stir to combine.
4. Cover the pot and reduce the heat to low. Simmer for 15 minutes, stirring occasionally.
5. Serve hot. Enjoy!
