Vegetable Curry
Ingredients:
- 1 white onion, diced
- 1 potato, diced
- 1 green pepper, diced
- 2 tablespoons of oil
- 1 cup of peas
Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the potato and green pepper and cook for an additional 5 minutes.
4. Add the peas and stir to combine.
5. Reduce the heat to low and cover the pot. Simmer for 10 minutes, stirring occasionally.
6. Serve the vegetable curry over cooked rice or with naan. Enjoy!
