Vegetable Fried Rice

Ingredients:

- 1 cup uncooked rice
- 1/2 cup wheat flour
- 1/2 cup edamame
- 2 carrots, diced
- 1 courgette, diced
- 4 mushrooms, sliced
- 2 tomatoes, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions:

1. Cook the rice according to package instructions.

2. In a large skillet, heat the oil over medium heat. Add the garlic, ginger, salt, and pepper and cook for 1 minute.

3. Add the carrots, courgette, mushrooms, and tomatoes and cook for 5 minutes, stirring occasionally.

4. Add the edamame and cook for an additional 2 minutes.

5. Add the cooked rice and wheat flour and stir to combine. Cook for an additional 5 minutes, stirring occasionally.

6. Serve warm. Enjoy!
