Make Vegetable Fried Rice
Vegetable Fried Rice
Ingredients:
- 2 cups cooked rice
- 2 eggs
- 1 small onion, diced
- 1 tomato, diced
- 1 cup broccoli florets
- 1 cup spinach leaves
- 1 bell pepper, diced
- 1 cup cabbage, shredded
- 1 cup bok choy, chopped
- 1 cup lettuce, shredded
- 2 tablespoons parsley, chopped
- 2 tablespoons olive oil
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and bell pepper and cook until softened, about 5 minutes.
3. Add the tomato, broccoli, spinach, cabbage, bok choy, and lettuce and cook until vegetables are tender, about 5 minutes.
4. Push the vegetables to one side of the skillet and add the eggs. Scramble the eggs until cooked through, about 2 minutes.
5. Add the cooked rice to the skillet and mix everything together.
6. Cook for an additional 5 minutes, stirring occasionally.
7. Add the parsley and season with salt and pepper to taste.
8. Serve hot. Enjoy!
