Recipe Name: Vegetable Fried Rice

Ingredients:
- 2 cups cooked rice (preferably day-old rice)
- 1 cup mixed vegetables (carrots, peas, corn, bell peppers, etc.), diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions, chopped for garnish (optional)

Step-by-Step Guide:

1. Heat vegetable oil in a large skillet or wok over medium heat. Add the chopped onion and minced garlic, and sauté until they become fragrant and slightly golden.

2. Push the onion and garlic to one side of the skillet, creating a space in the center. Pour the beaten eggs into the center and scramble them until they are fully cooked.

3. Add the diced mixed vegetables to the skillet and stir-fry for a few minutes until they are slightly tender. You can use a combination of carrots, peas, corn, bell peppers, or any other vegetables of your choice.

4. Push the vegetables to one side of the skillet and add the cooked rice to the other side. Break up any clumps of rice with a spatula and stir-fry for a couple of minutes until the rice is heated through.

5. Combine the rice and vegetables together in the skillet, and then add soy sauce and oyster sauce (if using). Stir well to evenly coat the rice and vegetables with the sauces.

6. Season with salt and pepper to taste. Be cautious with the salt as soy sauce already contains sodium.

7. Continue stir-frying for another 2-3 minutes until everything is well combined and heated through.

8. Remove from heat and garnish with chopped green onions, if desired.

9. Serve hot as a main dish or as a side dish with your favorite Asian-inspired meal.
