Vegetable Fried Rice

Ingredients:

-Half zucchini, diced
-1 pepper, diced
-1 onion, diced
-2 carrots, diced
-2 cups cooked rice
-2 potatoes, diced
-2 tomatoes, diced

Instructions:

1. Heat a large skillet over medium-high heat and add a tablespoon of oil.

2. Add the diced zucchini, pepper, onion, and carrots to the skillet and cook for 5 minutes, stirring occasionally.

3. Add the cooked rice, potatoes, and tomatoes to the skillet and stir to combine.

4. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender and the rice is heated through.

5. Serve the vegetable fried rice warm. Enjoy!
