Make Vegetable Fried Rice

Vegetable Fried Rice

Ingredients:

- 2 cups cooked rice
- 8 ounces tempeh, cut into cubes
- 1 large tomato, diced
- 2 potatoes, peeled and diced
- 1 zucchini, diced
- 2 carrots, peeled and diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the tempeh cubes and cook until lightly browned, about 5 minutes.

3. Add the garlic and cook for 1 minute.

4. Add the potatoes, carrots, and zucchini and cook for 5 minutes.

5. Add the tomato and cook for 2 minutes.

6. Add the cooked rice and stir to combine.

7. Add the soy sauce, salt, and pepper and cook for 2 minutes.

8. Serve hot. Enjoy!
