Make Vegetable Fried Rice

Vegetable Fried Rice

Ingredients:

- 2 cups cooked rice
- 1/2 onion, diced
- 1/2 red pepper, diced
- 1/2 apple, diced
- 1 carrot, diced
- 1 cup broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the onion and pepper and cook until softened, about 5 minutes.

3. Add the apple, carrot, and broccoli and cook for another 5 minutes.

4. Add the cooked rice and stir to combine.

5. Season with salt and pepper to taste.

6. Cook for another 5 minutes, stirring occasionally, until the vegetables are tender and the rice is heated through.

7. Serve hot. Enjoy!
