Vegetable Fried Rice

Ingredients:

- 2 cups cooked white rice
- 2 eggs
- 2 tablespoons butter
- 1 cup diced tomatoes
- 1 cup frozen mixed vegetables

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the butter and let it melt.

3. Crack the eggs into the skillet and scramble them until cooked through.

4. Add the tomatoes and frozen vegetables and cook for 3-4 minutes, stirring occasionally.

5. Add the cooked rice and stir to combine.

6. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are cooked through.

7. Serve hot. Enjoy!
