Make Vegetable Fried Rice
Vegetable Fried Rice
Ingredients:
-1 yellow pepper, diced
-1 sweet potato, peeled and diced
-1 potato, peeled and diced
-1 onion, diced
-1 carrot, peeled and diced
-1 cup of uncooked white rice
-2 tablespoons of olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Add the diced yellow pepper, sweet potato, potato, and carrot to the skillet and cook for an additional 5 minutes.
4. Add the uncooked rice to the skillet and stir to combine.
5. Season with salt and pepper to taste.
6. Cook for an additional 10 minutes, stirring occasionally, until the rice is cooked through.
7. Serve hot. Enjoy!
