Vegetable Frittata

Ingredients:

-1 large potato, peeled and diced
-1 onion, diced
-2 cloves garlic, minced
-1 carrot, peeled and diced
-4 eggs
-1 bell pepper, diced

Instructions:

1. Preheat oven to 375°F (190°C).

2. Heat a large skillet over medium heat and add the potato, onion, garlic, and carrot. Cook, stirring occasionally, until the vegetables are softened, about 10 minutes.

3. In a large bowl, whisk together the eggs. Add the bell pepper and cooked vegetables and mix until combined.

4. Grease a 9-inch pie plate with cooking spray. Pour the egg mixture into the pie plate and spread evenly.

5. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.

6. Let cool for 10 minutes before slicing and serving. Enjoy!
