Vegetable Frittata
Ingredients:
- 2 cups gluten free flour
- 2 tomatoes, diced
- 2 tablespoons margarine
- 1 capsicum, diced
- 2 courgettes, diced
- 1 can of beans, drained and rinsed
- 1 cup soy milk
Instructions:
1. Preheat oven to 350°F.
2. In a large bowl, mix together the gluten free flour, tomatoes, capsicum, courgettes, and beans.
3. In a separate bowl, mix together the margarine and soy milk until creamy.
4. Add the margarine and soy milk mixture to the flour and vegetable mixture and stir until combined.
5. Grease a 9-inch baking dish with margarine or oil.
6. Pour the vegetable frittata mixture into the baking dish and spread evenly.
7. Bake in preheated oven for 30 minutes or until golden brown.
8. Serve warm and enjoy!
