Vegetable Hash
Ingredients:
- 2 potatoes, peeled and diced
- 1 onion, diced
- 1 carrot, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the potatoes, onions, and carrots to the skillet and season with salt and pepper.
3. Cook, stirring occasionally, until the vegetables are tender and lightly browned, about 10 minutes.
4. Serve the vegetable hash warm. Enjoy!
