Vegetable Jaggery Curry
Ingredients:
- 2 tablespoons corn starch
- 2 tablespoons maida
- 2 tablespoons milk powder
- 1/2 cup jaggery
- 2 tablespoons ghee
- 1 tomato, diced
- 1 onion, diced
- 1 potato, diced
Instructions:
1. Heat the ghee in a large saucepan over medium heat.
2. Add the onion and sauté until softened, about 5 minutes.
3. Add the tomato and potato and sauté for another 5 minutes.
4. In a small bowl, mix together the corn starch, maida, and milk powder.
5. Add the jaggery and the corn starch mixture to the saucepan and stir to combine.
6. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
7. Serve hot with steamed rice or chapati. Enjoy!
