Vegetable Lo Mein


-1 eggplant, cut into cubes
-1 cup mushrooms, sliced
-1 leek, sliced
-1 zucchini, cut into cubes
-1/2 lb pasta of your choice
-1/2 cup cooked rice
-1/2 block of tofu, cubed
-2 tablespoons sesame oil
-2 tablespoons soy sauce
-1 teaspoon garlic powder
-1 teaspoon ground ginger
-1 teaspoon sugar


1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set aside.

2. Heat the sesame oil in a large skillet over medium-high heat. Add the eggplant, mushrooms, leeks, and zucchini and cook for 5 minutes, stirring occasionally.

3. Add the tofu, soy sauce, garlic powder, ground ginger, and sugar to the skillet and cook for an additional 5 minutes.

4. Add the cooked pasta and rice to the skillet and stir to combine. Cook for an additional 5 minutes, stirring occasionally.

5. Serve the Vegetable Lo Mein warm. Enjoy!
