Vegetable Omelette
Ingredients:
- 2 eggs
- 1/4 onion, finely chopped
- 1/2 tomato, finely chopped
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon refined flour
- 2 tablespoons vegetable oil
- 2 tablespoons mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon coriander, finely chopped
- 1/4 teaspoon chilli powder
Instructions:
1. In a medium bowl, whisk together eggs, onion, tomato, garlic, salt, black pepper, and flour until combined.
2. Heat oil in a large non-stick skillet over medium-high heat.
3. Pour the egg mixture into the skillet and cook until the eggs are set, about 3 minutes.
4. Flip the omelette and cook for another 2 minutes.
5. In a small bowl, mix together mayonnaise, ketchup, coriander, and chilli powder.
6. Spread the mayonnaise mixture over the omelette and fold in half.
7. Serve the omelette warm. Enjoy!
